How does a Grease Trap work and why do I need to install it in my kitchen?
A Grease trap will be connected to your waste water, the sink water will enter the trap & the solids (organic waste) will be trapped into the basket area. With baffle plates in place the grease trap will slow the flow rate of the water down to be able to separate the fat, oil and grease from the waste water. The fat will stay behind and the clear water will enter the main sewer line. Solids will go down and the fat will rise to the top.
Who needs to install a Grease Trap?
According to the national Waste Water Bylaw any premises producing food must have a grease trap to ensure you are taking responsibility for your Fat, Oil and Grease & solids created on the premises to protect the council main sewer lines.
How do I know I am installing the correct size Grease Trap?
The grease trap must be able to handle the flow rate from the wash up sink/s. Unfortunately the space to install internally is normally limited. We suggest a GT 500 (80L) grease trap for a single bowl & a GT 700 (120L) for a double bowl sink.
Why do I need a supplier to clean my Grease Trap/s?

Fat, Oil and Grease does get classified as Hazardous waste but the nature of the waste is more Organic (food waste). Because these foods are standing in water rotting it becomes Hazardous to humans, creating a smell.

By adding the organic waste into your black bin, you are creating contamination at the solid waste dumping sites. These foods will become sludge (liquid) the bags will tear and the liquid will contaminate the grounds and trucks. By pouring the liquid from the grease trap into a gully or floor drain is bypassing the system and putting the F.O.G's back into the main sewer system.

Your supplier will collect the Fat oil and grease including the organic waste, recycle or separate the waste and dispose of it in the correct manner at the correct liquid waste dumping sites.

How often do I need to clean my Grease Trap/s?

Daily maintenance needs to be done by staff, taking out the basket & let the water run out of the basket area, removing the solids (food particles) into a dedicated barrel with a sealed lid for the supplier to collect.

The intervals will depend on the client's production rates, and or budget and of cause the size of the grease trap.

We recommend at least 1 Deep clean per month with the daily maintenance from the staff.

Bigger establishments will need to clean more often.

How do I know my Grease Trap needs more service intervals?

When the flow rate is too much for the grease trap to handle, the fat will be pushed through the baffle plate and cause a fat build up in you outlet line.

This build up will eventually cause a blockage and the grease trap will overflow.

This fat will also ends up in the main sewer line ending up in fines from the council.

Is it safe for my staff to handle the Grease Trap?

Because the waste is “Hazardous” we recommend using gloves and a mask when cleaning the grease trap.

Nobody working with food can touch the grease trap, only cleaning staff.
